Why you became a vegan: My partner had been vegan for a few years prior and it was an easy choice for me to transition to a vegan lifestyle. I had not been eating dairy for awhile due to previous health issues, and we are fortunate to live in Portland, OR where the amount of vegan groceries, restaurants, and resources are diverse and plentiful.
Favorite foods/meals: I love noodles in all forms. Our favorite meal at home is spaghetti, but ramen, pho, mac nā cheez, baked ziti, literally all noodles are a gift to my mouth.
Favorite exercises: Any kind of squat.
